This is batch 1- made up of a handful of ex-bourbon barrels from Aultmore Distillery. Each cask that made the batch was selected for it’s bright fragrance, fruit forward character and sweet finish. The result is an elegant, unpeated, sipping whisky.
Minimal Intervention Scotch is a term borrowed from the wine world. It simply means we have done nothing that didn’t need done. No colouring, no filtration, no finishing casks, nowhere to hide. Just a simply made and elegant whisky presented to you exactly the way we found it.
The ABV is 46% because it has to be - otherwise the natural flavour compounds in the whisky go cloudy. They might do it anyway at low temperatures and that just the nature of an un-chill filtered whisky. We think these aromatics are worth keeping in the spirit- they are part of its DNA and add flavour and texture to the dram. If you’ve ever had a whisky below 46% abv, you can bet your bottom dollar that they have chill filtered out those cloud-causing aromatics and added colouring.
Batch 1 contains only 640 bottles from 3 exceptional ex-bourbon barrels- only those 3 barrels made the cut. The rest have been sent back to the racks for further maturation.

Nose
Delicate and fragrant pear drops, pineapple, and lemon sherbet
Palate
Super smooth and warming. Notes of fresh baked lemon drizzle cake accompany florals, oak wood, and powdered sugar.
Finish
Soft esters mingle with orchard fruit, oak, mild vanilla and malted barley.
